Choc Chunk Gluten-Free Hemp Cookies
Such delectable cookies with a good chunk of chocolate these are an instant hit!
- 100 g (¾ cup) Sunflower seeds
- 150 g Dark chocolate, chopped into chunks
- 32 g (¼ cup) New Hemisphere Hemp Flour
- 200 g (1+1/3 cups) Gluten-free plain flour
- 1 tsp Baking powder
- ¼ tsp Salt
- 1 Egg
- 60 g Butter, melted
- 1 tsp Vanilla extract
- 125 ml (½ cup) Pure maple syrup
- 2 tbsp New Hemisphere Hulled Hemp Seeds
- Preheat oven to 180°C.
- Grease and line two baking trays with baking paper.
- Combine seeds, chocolate chunks, flours, baking powder and salt in a bowl.
- Add egg, butter, vanilla and maple syrup and mix to form a dough.
- Chill for 20 minutes to firm up.
- Divide mixture into 12 then roll with wet hands into balls.
- Transfer to trays and press down to form 1 cm thick rounds.
- Sprinkle over hemp seeds and bake for 15 minutes or until golden.
- Cool on trays and enjoy!
