Berry Fudge Protein Hemp Brownies
Finding the right balance between healthy and not so healthy is difficult but this brownie recipe with its substitution of refined white flour for hemp seed flour, and the addition of raspberries and prunes, cashews and coconut sugar makes it well on the way to finding that balance. Enjoy. It's delicious.
Ingredients
- 125 g Butter
- 125 g Dark chocolate
- 150 g (2/3 cup) Coconut sugar
- 3 Large eggs
- 1 tsp Vanilla bean paste
- 2 tbsp Cocoa powder, plus extra to serve
- 50 g (½ cup) New Hemisphere Hemp Seed Flour
- 25 g (¼ cup) Protein powder
- ½ tsp Salt
- ½ tsp Baking powder
- 150 g Frozen raspberries
- 100 g (½ cup) Prunes, roughly chopped
- 50 g (¼ cup) Cashews
Instructions
- Preheat oven to 160C.
- Melt butter and chocolate in a microwave-safe bowl for 20-second bursts until the butter is melted.
- Stir into a smooth mixture.
- Add sugar, eggs and vanilla and stir to combine.
- Add cocoa, flour, protein powder, salt and baking powder and mix to combine.
- Fold through frozen raspberries, prunes and cashews.
- Transfer to prepared pan and bake for 30 minutes or until crisp on top but still gooey in the centre.
- Stand to cool then chill for 1 hour.
- Cut and serve dusted with extra cocoa.
