Choc Chunk Gluten-Free Hemp Cookies

Ingredients
  

  • 100 g (¾ cup) Sunflower seeds
  • 150 g Dark chocolate, chopped into chunks
  • 32 g (¼ cup) New Hemisphere Hemp Flour
  • 200 g (1+1/3 cups) Gluten-free plain flour
  • 1 tsp Baking powder
  • ¼ tsp Salt
  • 1 Egg
  • 60 g Butter, melted
  • 1 tsp Vanilla extract
  • 125 ml (½ cup) Pure maple syrup
  • 2 tbsp New Hemisphere Hulled Hemp Seeds

Instructions
 

  • Preheat oven to 180°C.
  • Grease and line two baking trays with baking paper.
  • Combine seeds, chocolate chunks, flours, baking powder and salt in a bowl.
  • Add egg, butter, vanilla and maple syrup and mix to form a dough.
  • Chill for 20 minutes to firm up.
  • Divide mixture into 12 then roll with wet hands into balls.
  • Transfer to trays and press down to form 1 cm thick rounds.
  • Sprinkle over hemp seeds and bake for 15 minutes or until golden.
  • Cool on trays and enjoy!
