Notes:
If you don’t have a double boiler, use a glass bowl that you can place over a saucepan.
You can substitute cocoa powder for cacao powder.

Raw Chocolate Hemp Cake
A small slice with coffee a match made in heaven!
Ingredients
Cake:
- 22 fresh dates, pitted
- 400 g walnut pieces
- 100 g new hemisphere™ Hemp Seed Hulled
- 3 tbsp heaped cacao powder
- 2 tbsp new hemisphere™ Hemp Protein
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 1 orange, zest and juice of
- 1 tsp vanilla extract
Chocolate Icing
- 1/2 cup cacao powder
- 6 tbsp maple syrup
- 3/4 cup cacao butter
Instructions
Cake:
- Soak the dates in a small bowl for 5-10 minutes in boiling water. Discard liquid.
- Process the walnuts, new hemisphere™ Hemp Seed Hulled, cacao powder, new hemisphere™ Hemp Protein, cinnamon, and salt in a food processor until mixture resembles coarse breadcrumbs.
- Add dates, orange zest, and vanilla extract. Process again until the cake starts to come together when pressed. If it doesn't, add a little juice from the orange and process again. Repeat until the mixture comes together.
- Press cake into a lined 15 cm round springform baking tin.
- Place in the refrigerator to chill for 2 hours.
- Take the cake out at room temperature for at least 30 minutes before you ice. This is so the cake is not too cold for the icing.
- Remove from tin and spread with chocolate icing (on top and sides) using a bread and butter knife.
Chocolate Icing:
- Melt all the ingredients in a double boiler.
- Work quickly to ice the cake and do not overheat as the icing can then seize which will make it difficult to spread over the cake.
- Chill again in the refrigerator until icing is set.
Pro Tip
- This is a super rich cake, so small portions are definitely recommended! Take this mix and create delicious Protein Balls covered in chocolate. Take it one step further and dip in hemp seeds while the chocolate is wet.
