Hemp Seed Flour Chocolate Chunk Cookies
- 125 g butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 2 tbsp condensed milk
- 1 tsp vanilla essense
- 1 egg, lightly beaten
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 cup quinoa flour (or white flour)
- 1/4 cup new hemisphere Hemp Seed Flour
- 160 g dark chocolate
- Cream butter and both sugars for at least 10 minutes, then beet in condensed milk and vanilla essence
- Measure flours and sift three times to aerate, then add baking powder and baking soda
- Lightly beat egg with a small amount of sifted flour so the mixture doesn’t curdle
- Fold in flour in parts, then break up chocolate into small chunks and combine gently.
- Chill dough for 3-4 hours
- Preheat oven to 180 degree on bake.
- Roll mixture into balls (approximately 2 tbsp) and place on a lined tray evenly spaced
- Bake for 12-15 minutes. Let cool for 10 minutes on the tray before transferring to a cooling rack
