Super Seeded Loaf

Power up with Hemp Seed, Chia Seed, and Flaxseed!
Prep Time 15 minutes
Cook Time 50 minutes
Total Time 1 hour 5 minutes
Servings 12

Ingredients
  

  • 5 eggs
  • 3/4 cup cooked mashed sweet potato
  • 6 tbsp coconut oil
  • 1 tsp honey
  • 1 tbsp raw apple cider vinegar
  • 1 cup almond meal
  • 1/3 cup new hemisphere™ Hemp Seed Flour
  • 2 tbsp new hemisphere™ Hemp Seed Hulled
  • 2 tbsp chia seeds
  • 2 tbsp flaxseed
  • 1 tsp baking soda
  • 1/2 tsp sea salt

To serve:

  • Butter and chia seed jam

Instructions
 

  • Preheat oven to 180°C Bake.
  • Grease and line a loaf tin with non-stick baking paper.
  • In a large mixing bowl, whisk the eggs and mashed sweet potato till smooth. Whisk in the coconut oil, honey and vinegar until combined. Do not over mix.
  • In another large mixing bowl, combine the almond meal, new hemisphere™ Hemp Seed Flour, seeds, baking soda, and sea salt. Stir with a fork to remove any lumps.
  • Gently fold the wet mixture into the dry. Do not over mix.
  • Transfer the mixture into the loaf tin and smooth the top with a spatula.
  • Bake for 45-50 minutes or until a knife/skewer inserted in the centre comes out clean.
  • Cool slightly then remove from loaf tin to cool completely on a wire rack or chopping board (1-2 hours).

To serve:

  • Slice and ENJOY with lashings of butter and chia seed jam.
