1/4cupgood quality runny honey (we used Mount Somers Clover Honey from New World)
1tspvanilla extract
1cupunsweetend thick greek yoghurt
1/3cuphigh quality oil (we used omeganz™ olive oil)
2apples, peeled and diced
Crumble
3tbsprolled oats
1.5tbspcoconut sugar or brown sugar*
1/2tspground cinnamon
1tspnew hemisphere™ hemp seed hulled
1tspchia seeds
1tbspbutter
Instructions
Muffin
Preheat the oven to 180 degree fan-bake.
Grease and line muffin tin with paper cases.
Sieve baking powder and soda, then mix with remaining dry ingredients.
In a large bowl, beat eggs, sugar, honey and vanilla until well combined.
Beat in yoghurt and oil until smooth and well combined and then stir in apple.
Add dry mix into the wet mix, using a large spoon to fold both mixtures together until just combined. (Over mixing makes muffins tough).
Crumble
Combine rolled oats, sugar, hemp seeds, chia seeds and cinnamon together in a separate bowl.
Rub in butter with rest of crumble mix until mixture looks like bread crumbs.
Baking Instructions
Spoon muffin batter into paper cases, and sprinkle crumble on top.
Bake for 20-25 minutes, or until muffins are golden brown. The trick to perfectly cooked muffins is to give them a light press and they should spring back.
