To save time, you could substitute 2 raw cloves of garlic for the roasted garlic.

Garlic Hemp Aioli

Delicious hempy garlic aioli!

Ingredients
  

  • 1 head garlic
  • 1 tsp omeganz™ Olive Oil
  • 3 tbsp omeganz™ Olive Oil
  • 1 pinch sea salt
  • 1 large egg yolk
  • 2 tsp fresh lemon juice
  • 1/4 cup new hemisphere™ Hemp Seed Oil
  • salt and pepper to season

Instructions
 

  • Preheat oven 200°C Bake. Cut the top of the head of garlic. Place in the middle of a sheet of tin foil. Drizzle with omeganz™ Olive Oil (1 teaspoon) and a pinch of sea salt. Wrap the garlic up and place directly on the oven rack to roast for one hour. Leave to cool.
  • Squeeze out 4 cloves of roasted garlic and mash with a little salt in a small bowl.
  • Whisk together yolk, lemon juice, and mustard in a medium glass bowl.
  • Combine oils and add slowly to the yolk mixture, whisking constantly. Before you add more oil, make sure all the oil is incorporated and the mixture emulsified. The mixture will thicken during this process.
  • Finally, whisk in the garlic paste and season with salt and pepper.
  • Store in the refrigerator.
