The kids (and adults) will love this healthier muffin option
Preheat the oven to 180 degree fan-bake.
Grease and line muffin tin with paper cases.
Sieve baking powder and soda, then mix with remaining dry ingredients.
In a large bowl, beat eggs, sugar, honey and vanilla until well combined.
Beat in yoghurt and oil until smooth and well combined and then stir in apple.
Add dry mix into the wet mix, using a large spoon to fold both mixtures together until just combined. (Over mixing makes muffins tough).
Combine rolled oats, sugar, hemp seeds, chia seeds and cinnamon together in a separate bowl.
Rub in butter with rest of crumble mix until mixture looks like bread crumbs.
Spoon muffin batter into paper cases, and sprinkle crumble on top.
Bake for 20-25 minutes, or until muffins are golden brown. The trick to perfectly cooked muffins is to give them a light press and they should spring back.
Remove from tin and cool on a cooling rack.
Pro Tip
*Substitute brown sugar for coconut sugar as coconut sugar as it has more nutrients and a lower GI.
Don't forget, you can always reduce the amount of sugar you put into your baking to reduce the overall sugar content.
